Thanks for adding this Alessandro. I left some suggestions. I just dont think we need the labels generated by helm and the old chart version in there when we are applying them by hand.
The other thing that comes to mind is that we can give the helm template | yq ... code instead of the fixed manifests (if possible) and that way we dont have to keep maintaining this. But I am not sure if these can be easily derived like that. Let me know what you think.

This needs to be tested yet, I wanted to report it to not forget.
