Because the gitsigns recommended keymaps are not enabled by default, I think there is a case to be made for removing that documentation from which-key entirely, or to add those keymaps in by default.
I would love to hear some discussion around this, and for now I have made a PR (#1925) that simply adds some clarifying comments on the which-key configuration
