Explore `cdo` support

[euronion]

cd2es (https://joss.theoj.org/papers/10.21105/joss.07541) includes cdo support for handling weather datasets.

We could explore to employ cdo for remapping or interpolation, rather than going about using our own methods. Might make some functions leaner or/and more efficient.

@euronion , a first exploration about integrating cdo could be found here (https://github.com/PyPSA/atlite/pull/436/files#diff-21075d1cd8aef3384e59c3a38554714e435e546fb0ac1f76dc416518d1276e1e), but its not that convenient.
